This pork tenderloin recipe is simple, easy, and delicious. It is good hot and cold and can be sliced all at once so that it is ready ahead of time for future meals (or snacks). A small tenderloin makes several servings, so you can enjoy this delicious treat a number of times! The fond is especially delicious and is like a perfectly balanced sweet, salty, meaty candy.
Ingredients: 1 pork tenderloin a few T. honey a few T. brown mustard a few tsps. sage a few tsps. thyme a few tsps. rosemary (you can use these herbs or whichever fresh herbs you prefer and use them to taste) salt and pepper to taste a few T. olive oil Steps: 1) Preheat oven to 350 degrees F. 2) Place pork tenderloin in glass baking dish (or on a metal sheet pan), lightly rub all sides with olive oil, salt, and pepper. 3) Place in oven and cook most of the way. 4) While the pork is in the oven, mix up the honey mustard. (This can be done ahead of time and kept in the fridge, I always have a bottle of honey mustard in my fridge. When the bottle of mustard gets low, I add honey to it and shake it up. It's good to always have some on hand.) 5) Chop up the herbs. 6) Take the pork tenderloin out of the oven, apply the honey mustard over the top of the entire piece of meat. (It's okay if some spills off the sides; it's really yummy when it caramelizes on the side.) 7) Sprinkle the herbs on top. 8) Place the baking dish back in the oven and cook the meat the rest of the way until it's heated all the way through (at least 145 degrees F in the center). Cooking times will vary depending upon the size of the piece of meat. 9) Let cool, slice, and enjoy with a seasonal veggie.
