I make this to accompany pulled pork or any other summer dish really. If you love vinegar, you will love this dish!
Ingredients: Cabbage Carrots Salt Pepper Apple Cider Vinegar (Organic, Raw, Unfiltered) Honey (optional) Olive Oil (optional) Cumin Celery salt Steps: 1. Shred the cabbage and carrots (a third of a decent-sized head of cabbage and 2 medium carrots makes ample amounts of this salad). 2. Add in enough vinegar to cover about half of the depth of the shredded cabbage and carrots. 3. Add in some salt and pepper to taste and toss it all around with a fork. 4. This salad is very strong, so you can add a bit of honey and/or olive oil to help balance it out if you wish. This salad pairs perfectly with a well-spiced pulled pork. Like many salads of this type, it is better as you let it sit and marinate in the refrigerator.
